Have you ever eaten the " Yulai Mushroom " with super high nutritional value ? Yulai mushroom belongs to the six major categories of vegetables. In addition to its low calorie characteristics, it also has antioxidant, anti-inflammatory, anti-cancer and immune regulation properties. This article introduces 3 delicious Yulai mushroom dishes to make you eat happily and healthily.

Is Yulai Mushroom a mushroom?

Yulai mushroom is also known as grass mushroom. It is not a mushroom! It is a terrestrial edible blue-green algae with a dark green appearance and irregular shape. It tastes like seaweed-flavored fungus.

The main production area is Manchuria, Pingtung. It needs to grow in a strict environment: clean air, unpolluted water, and a place with sufficient sunshine.

Currently, most of the Yulai mushrooms sold online are in dried form, but don't worry, according to a study by Zhuoyu Li et al. in 2017 , dried Yulai mushrooms also retain the above characteristics.
 

3 Yulai Mushroom Cooking Methods and Nutrition 

1.  Hot and Sour Mushroom Soup

【Material】

50g of shimeji mushroom, 2 eggs, some shredded pork, 2 black fungus, 1 box of tofu, half a pack of enoki mushrooms, some shredded radish, vinegar, soy sauce, chopped green onion, white pepper


【practice】

  1. Yulai Mushrooms Sichuan Hot Pot
  2. Pour 1000cc of water, add the above non-seasoning ingredients and cook until done.
  3. After cooking, add 3 tablespoons of black vinegar and 2 tablespoons of soy sauce
  4. Add 2 eggs
  5. Finally, add chopped green onion and white pepper

2. Mushroom scrambled eggs

【Material】

1 egg, 20 grams of shiitake mushrooms, some salt, some chili pepper, some minced garlic, some green onions


【practice】

  2. Add salt to egg mixture
  3. After the eggs are cooked, add the mushrooms
  4. Add chili and onion and stir fry before serving

3.  Mushroom Okonomiyaki

【Material】

50g shimeji mushroom, 2 eggs, 300g shredded cabbage, 1/2 bowl of low-gluten flour, 1/4 diced onion, 1/3 shredded carrot, 50g enoki mushroom, 30g low-gluten flour, salt, pepper, dried bonito flakes, Japanese soy sauce


【practice】

  1. Yulai Mushrooms Sichuan Hot Pot
  2. Mix eggs, low-gluten flour and water, add all vegetable ingredients
  3. Mix the vegetable batter into a thick consistency and season with salt and pepper
  4. Fry in a pan until both sides are golden brown
  5. After removing from heat, brush with a light Japanese soy sauce and top with dried bonito flakes.

 

FAQ about Yulai Mushroom 

1. How to clean shiitake mushrooms? 

Fresh shimeji mushrooms need to be soaked in water to allow impurities to settle, then the water should be poured out, and this process should be repeated 2-3 times. Then, tiny impurities should be removed with running water until all the impurities in the shimeji mushrooms are completely removed. Freshly harvested shimeji mushrooms can be stored in the refrigerator for about two weeks after being washed. 

2. What happens if you eat too much shiitake mushroom?

Mushrooms are vegetables, so eating too much will not have any adverse effects. If you like its taste, it is a good healthy ingredient! However, it is recommended to eat a variety of vegetables to obtain different nutrients!

3. Who is not suitable for Yulai Mushroom?

Suitable for everyone! Some articles point out that it is not suitable for people with hyperthyroidism, but there is no trace element analysis of yulai mushroom in the food database, and searching foreign literature and databases does not clearly indicate the iodine content of yulai mushroom. Therefore, it is estimated that the iodine content should not affect thyroid function, which means that people with hyperthyroidism can consume it in moderation.
